River Palace Hotel: classic riverside trout dinner. Hotel Pameer Bahrain: reasonable price and consistent quality. Roadside trout dhabas between Madyan and Bahrain: extremely fresh because they often cook from their own farm pools. Stop at a busy dhaba. Fast turnover means fresh fish. Avoid trout from quiet roadside stalls late in the day when the fish may be hours old.
Madyan has several trout farms where you can pick your fish live from the pool, watch it being cleaned, and have it cooked on the spot. This is one of the freshest trout experiences in Pakistan. Costs are similar to Kalam restaurants. PKR 1,200 to 2,000 for a whole fish prepared with sides. Visit in daylight and choose a farm with clean pools and visible water flow.
Plain naan or chapati works best, it lets the fish flavor lead. A side of grilled corn (in season), a small bowl of daal, raita and a fresh salad of onion, tomato and cucumber. End with a glass of strong black tea or green kahwa. Avoid heavy karahi alongside trout, the spices overpower the delicate fish.
Always ask if the fish is fresh-caught today. Choose a medium-size fish (around 350 to 500 g), very large fish can be tough. Order it pan-fried if you are unsure of the kitchen, it is the most forgiving preparation. Squeeze fresh lemon over the fish before eating. Use your fingers for the bones.
